Treasures of Colombia: Aborrajado (Colombian Street Food)

The Aborrajado was originated in Valle de Cauca(Cauca Valley), which is located in the Western part of the country and is bordered by the Pacific Ocean. I must say that the people of the Valley created a novel dish that leaves your tummy satisfied and happy.

In my opinion the fusion of ingredients are somewhat peculiar, however, it works!

The ingredients include:

  • Ripe Plantains
  • Mozarella or Campesino Cheese (hard white cheese)
  • Guava paste (guava jam)

Now let me walk you through the steps:

First: Peel the plantain and cut it in four (4) pieces and fry until golden brown.

Next: While the plantain is frying, make a batter of eggs, milk, flour, sugar and a pinch of salt.

Then: Take the fried plantains from the oil and make an opening then stuff with Jam and Cheese.

Afterward: Dip fried stuffed plantain in batter and then immerse in oil.

Finally: Remove plantain and then serve.

I went to a restaurant and they did it a little differently; after frying and stuffing the plantain with the guava paste, they added the cheese on the top and then put it in the oven for approximately three (3) to five (5) minutes instead of dipping it in the batter and re-frying.

Whatever the method, the Aborrajado will not disappoint!
