Jamaican Recipe of the Day: Vegetable Seasoned Rice

What a great treat for people with a more vegetarian preference. This Jamaican Recipe of the Day, Vegetable Seasoned Rice uses ackee and saltfish to spice up di dish.

You can even use some leftovers, for quicker prep time.

Jamaican Recipe of the Day: Vegetable Seasoned Rice

Ingredients:

1 cup Ackee
1/2 lb shredded Saltfish
1 onion
1Tomato
1 bell pepper
1 carrot
1 tin whole corn
1 tin green peas
1 tbs butter
All-purpose seasoning for added flavor 1pk coconut milk

Preparation :

In a saucepan add 2 cups water, 1cup coconut milk, and all-purpose seasoning.
Allow to boil for 15 mins, then add all other ingredients to boil for another 10 mins.
Add 2 cups rice, turn heat to semi-low an allow to finish cooking.
Your meal should be ready in 15 to 20 minutes.
Seasoned rice is a staple in Jamaica enjoyed by most people. It is a one-pot meal, where everything is cooked together. So no other meat is needed.
It is also a great source of starch and protein. You can enjoy it with some cool lemonade.
