No one is really clear or certain about the origin of the meatball, however it is loved and widely eaten in many countries if not all.
Here in Colombia, the Spanish name for meatball is Albondigas and it’s a favorite. It is eaten with white rice, spaghetti or potatoes.

Each restaurant or home has a different personal touch to it; some are really small, average-sized or large. I went to a restaurant called ‘Tia Lilly’ and the Albondigas (meatballs) were bigger than a golf ball and stuffed!
Yes, I said it…stuffed!
I was really excited about trying it because that would have been my first time eating meatball that way. As I had mentioned earlier, the meatball was bigger than a golf ball and when I cut it in half, there was a piece of a boiled egg inside of it along with pieces of sausage, mixed vegetables, and cheese.
Of course, it tasted good. However, a little bit too dry for me.
It was accompanied by a plate of baby potatoes, lettuce and another plate with steamed cauliflower doused in garlic butter. The side dishes really complimented the meatball well, my recommendations would be to make it a bit moist and also to serve it with a nice sauce.
So, if you like exploring new and fun ways of cooking; this stuffed meatball will be a great addition to your cooking recipes.
